This morning we had our first class, Animal Health and Diseases. We started about a half an hour late but that is because our professor was in a different room than we were! The class itself seems pretty interesting but he is not the most exciting professor. He lectured today about aquatic regulations for importation/exportation and how it relates to disease. Veterinarians really are key to preventing disease in animals. We have not gotten our syllabus yet, but it seems like we are going to have lots of hands-on experience while here; up in the mountains, clinics, farms, etc. I’m very excited for the experiences!
We also had a cooking class at noon by Chef Charis Heracleous. The food that he made, I didn’t want to stop eating it! He grilled Halloumi cheese, which is a local cheese and put it inside pita bread (kind of like a grilled cheese – but better). We also has ravioli stuffed with Halloumi cheese and fried meatballs. He handed us out recipes for many traditional Greek dishes, from salads to squid to dessert. Heracleous also warned us that many a time people gain about 10-20 lbs if they eat too much of the Halloumi. It just tatstes so good that no one can stop eating!
